White Bait Fish Broth

Feeling a little under the weather? Don’t know what to cook for the kids? You need something rich, healthy, packed with nutritions, home- cooked, and most importantly safe for anybody to eat. I am saying this because, my children has skin sensitive with frequent eczema, so they cannot take anchovies (amazing source of calcium), especially great when it gives out a great familiar taste from panmee that many chinese loves. So I took the test to swap the anchovies with white bait fish for the broth instead. I have also consulted this from my go to traditional medicine practitioner. My entire family loved it!. Psst… It is super simple too.

You can use this broth as porridge base, or noodle soup, or even when you need some liquid to stir fry- use this broth instead of water, it give adds more nutrition to your food.

This is a superb easy and relatively low noise cooking amazing for mothers who are worried to wake the kids up during their nap.

Ingredients

  • 1 Cup of white bait fish (rinsed)

  • 2 cloves of garlic (crushed)

  • A piece of dried seaweed

  • 1.5L water

  • Oil

  • Salt -to taste

Directions

  • Heat up oil, stir fry the white bait fish until dry and turns slightly brown. img 9035img 9036
  • Add in the garlic and stir fry till fragrant.img 9037
  • Pour in boiled hot water- be careful of water boiling too vigorously but this is crucial to keep the fragrant ingredients continue to cook in hot water. Keep the soup boiling and add in the washed dried seaweed. You will see that the soup turns milky colour that came from the nutritional packed white bait fish. Cover the lit and let it simmer on medium heat for 20 minutes. If you are not rushing, keep it for 30 mins. Also, Taste in between if you like the slight saltiness given out by the fish, else feel free to add in 2 teaspoons of salt like I did.img 9039img 9040img 9041
  • Lastly, you can filter out the ingredients for the clear broth with a sieve. img 9045img 9046

Notes

  • If you are a huge garlic hater, go ahead and skip the garlic. I use it to add fragrance to the soup like how they likes garlic in Bak Kut Teh.
  • The dried seaweed is used to give collagen into the soup. It is natural and it gives a slight under the sea kinda taste (maybe I’m just imagining it) but yeah I like using it in soups. Please make sure that you clean it by rubbing the surface clean with running tap water. especially the dried sands or tiny stones stuck on the surface.

Tadaa, there you have it! clear broth for just anything you wanna make. It goes best with noodles. Trust me! If you have noodle monsters at home like my daughter, she will love you extra that day. Put in some vegetables and pork balls or fish balls or even minced pork to give extra freshness and sweetness to the soup to go with noodles or in porridge.
