When you want some heavenly soul feeding soup, this is what you can try. Cordyceps and cordycep flowers are known for nurturing the respiratory systems in our body. It is also very fragrant. It doesn’t have much taste but it gives out a hint of natural orange colour. I drank this soup somewhere in a very fancy Chinese restaurant and I tried to mimic it, i say mimic because I am not sure if I’ve gotten the ingredients right. You should give this a try!
Cordycep Flower Chicken Soup

3 Whole chicken leg (remove skin)
1/2 cup of cordycep flowers
1/2 cup of Yuk Chuk
2 pieces Dong Quai (Female Ginseng)
2 large dried scallops/ equivalent amount with small dried scallops
4 dried shitake mushrooms (soaked)- keep the mushroom essence for soup
1 dried fish maw (soaked)- can pass on this if you don’t have this
2 L water
Salt
Directions
- Put all the ingredients into the pot.
- Add in hot boiled 2 L water and the mushroom essence from the soaked mushroom water.
- Add in 2 teaspoons of salt.
- Let it boil for 5 mins and then bring down the heat to medium low heat for simmering for 4 hours. I like to boil my soup long but if you don’t have time, 2 hours minimum.
Notes
- Cordycep Flowers and YukChuk are well known for nourishing the respiratory system in our body. Dong Quai aims for woman to take to get rid of bad blood, anemia and many more blood related issues. Dong Quai can be heaty to the body if used too much and frequent so 2 pieces is enough. All ingredients has to be rinsed and washed before using.
- I’ve tried this recipe without the fish maw and it tastes equally good. The fish maw isn’t essential.
- Please consult with your physician if you have concern on the certain herbs used.
I used whole chicken legs because they are super yummy after long hours of cooking in the soup. It gives super sweet taste to the soup too. Take this soup especially when you catch cold or for nourishing cold body or with weak and troubled breathing.
