Poached Egg, Avocado, Smoked Salmon and Mushroom on Sourdough Toast

Love a good, big and satisfying breakfast? Feeling a little extra today and looking for something real good to start a Sunday morning or a quick bring to office packed breakfast to beat the blues, here is your remedy. I personally a huge fan for toasts for breakfasts but I like it savoury so basic jam or any pastes wont satisfy my beautiful morning. Then I saw a tv programme that shows scrumptious breakfast spots and one of those spots made this famous or the other way round depends on how you like to see it. I never liked going to cafes to burn a hole in my wallet for something that can be easily prepared at the comfort of our own home. Really guys, breakfasts are so easy to prepare, you just need to think of the people you love while you prepare it. If you are cooking for yourself, think about how you want to enjoy it and make it exactly how it will make your day wonderful, because you love yourself and you deserve it! Okay enough being cheesy here you go! My favourite breakfast so far.

Poached Egg, Avocado, Smoked Salmon and Mushroom on Sourdough Toast

Ingredients

  • 2 slices of sourdough bread

  • 1 clove chopped garlic

  • 4 fresh shitake mushroom cut into slices

  • 4 whole slices of smoked salmon (cut into pieces)

  • 1 whole ripe avocado cut into cubes

  • soy sauce

  • 2 eggs

  • White vinegar

Directions

  • Toast your bread in a toaster till slightly brown.
  • Cut the shitake mushrooms into slices and stir fry it with some chopped garlic and soy sauce to taste.
  • Cook the poached eggs- remember to crack the egg into a bowl first, then boiling water in a pot, add a teaspoon of white vinegar, stir the boiling water into a hurricane swirl and pour the egg in the middle of it. Turn the heat down a little. once the egg white has set, can sieve the egg up.
  • Lastly, gather all the ingredients into a bowl or a Mason jar if it is for to go. Give it a good mix and top it onto your toast and ready to be touched by the hands of love for preparing a wonderful breakfast for yourself. img 8393

Notes

  • The poached eggs have to be cooked one at a time. it is pretty hard to manage in the frist few rounds but don’t give up, I don’t get successful ones until a gazillionth time trying.

Everybody should try this breakfast just because it is so easy to gather everything and so yummy if you like savoury breakfast over sweet breakfasts. I know it could be tricky to get the right ripeness for the avocados, trust me I have been waiting for this breakfast because of waiting for the avocados to ripe if you understand what I mean.
